One Bowl Tuna Salad

Perfect for lunch, or even a quick no-fuss dinner when you can’t face turning on the oven.

Ingredients
  

  • 1 tin tuna in spring water or olive oil drained
  • 2 tbsp mayonnaise or Greek yoghurt for a lighter version
  • ½ cup sweetcorn tinned or frozen & thawed
  • ½ cucumber diced
  • Salt & pepper to taste

Instructions
 

  • Grab a medium bowl, add the drained tuna, and break it up with a fork. Stir through the mayo, then fold in the sweetcorn and cucumber. Season with salt and pepper, give it one last mix, and that’s it, you’re done!
  • Serve it on toast, lettuce leaves or straight out of the bowl.
