One Bowl Tuna Salad
Perfect for lunch, or even a quick no-fuss dinner when you can’t face turning on the oven.
- 1 tin tuna in spring water or olive oil drained
- 2 tbsp mayonnaise or Greek yoghurt for a lighter version
- ½ cup sweetcorn tinned or frozen & thawed
- ½ cucumber diced
- Salt & pepper to taste
Grab a medium bowl, add the drained tuna, and break it up with a fork. Stir through the mayo, then fold in the sweetcorn and cucumber. Season with salt and pepper, give it one last mix, and that’s it, you’re done!
Serve it on toast, lettuce leaves or straight out of the bowl.
