Cream Lime Crema

Ingredients
  

  • 1 cup plain Greek yogurt preferably full-fat or 2%
  • 1-2 tsp lime zest from 1 large lime
  • 2-3 tbsp fresh lime juice
  • 2 tbsp finely chopped fresh cilantro
  • 1/4 tsp fine sea salt to taste
  • 1/8 tsp freshly ground black pepper
  • 1-2 tsp water or milk optional, to thin

Instructions
 

  • Add Greek yogurt to a medium bowl
  • Stir in lime zest and lime juice
  • Mix in chopped cilantro
  • Season with salt and pepper
  • Whisk until smooth and creamy
  • Adjust thickness with a splash of water or milk, if needed

Notes

Use fresh limes rather than bottled juice whenever possible. The combination of zest and juice is what really gives this crema its bright
