  • 700 g beef chuck or rump steak cut into large cubes
  • 2 tbsp olive oil or butter
  • 1 large onion sliced
  • 2 carrots sliced into thick rounds
  • 3 cloves garlic minced
  • 2 cups beef broth or stock
  • 1 cup red wine optional but adds great depth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste

  • Sear the Beef: Heat the olive oil or butter in your stove-top pressure cooker over medium-high heat. Add the beef pieces and brown them on all sides. This step adds a ton of flavor, so don’t rush it. Do it in batches if needed.
  • Add Aromatics: Once the beef is browned, add in your onions, carrots, and garlic. Sauté for about 2–3 minutes until they start to soften and smell amazing.
  • Deglaze the Pot: Pour in the red wine (if using) and scrape up all those browned bits from the bottom of the pot—they’re flavor gold. Let it simmer for about a minute to reduce slightly.
  • Add the Rest: Stir in tomato paste, thyme, paprika, salt, pepper, and beef broth. Mix everything well so the flavors combine.
  • Pressure Cook: Secure the lid, bring your cooker up to pressure over high heat, then reduce to medium-low and cook for about 30–35 minutes.
  • Release Pressure: Allow natural release for 10 minutes, then carefully quick release any remaining steam.
  • Serve: Open the lid, give everything a gentle stir, and check seasoning. The beef should be fork-tender and full of rich, savory flavor.
