Zesty Lemon-Lime Herb Sauce for Chicken (Made in the Microwave!)
There are days when chicken just feels a bit plain, right? You cook it, put it on the plate, and think… this needs something. That’s where this quick little lemon-lime herb sauce swoops in to save the day. And the best part? You can make it in a jug in the microwave. No saucepan, no stirring over the stove, no fuss.

It’s fresh, tangy, and has that “I put in effort” vibe, even though it takes all of five minutes. Perfect for when you want to make dinner feel special without actually doing much.
What you’ll need
- 1 cup chicken stock (or veggie stock if that’s what you’ve got)
- 2 tsp cornflour (cornstarch)
- 2 tbsp lemon juice
- 1 tbsp lime juice
- 1 tsp dried herbs (oregano, thyme, or an Italian mix all work)
- 1 garlic clove, crushed (or ½ tsp garlic powder)
- 1 tbsp butter (olive oil works too)
- Salt and pepper, to taste
How to make it
Start by whisking the cornflour into the cold stock in a microwave-safe jug, this keeps it smooth and lump free. Stir in the lemon juice, lime juice, herbs, garlic, and butter.
Microwave on high for 1 minute, stir, then pop it back in for another 1–2 minutes until the sauce thickens. Season with salt and pepper, taste, and if you’re a citrus lover like me, add an extra squeeze of lemon. Pour it over your chicken and enjoy!

Variations & Substitutions
- Citrus twist: Swap lime for orange juice for a softer, sweeter flavour.
- Creamy version: Stir in a splash of cream or a spoonful of Greek yoghurt at the end.
- Spicy kick: Add a pinch of chilli flakes or a dash of hot sauce before microwaving.
- Fresh herbs: Parsley, coriander, or basil stirred in after cooking give it a fresh lift.
- Extra savoury: A teaspoon of mustard or a dash of soy sauce adds more depth.
