Creamy Mustard & Herb Sauce (Made in the Microwave)
Some nights call for a sauce that feels rich and comforting without being complicated. This creamy mustard and herb sauce is exactly that, smooth, tangy, and ready in minutes. What you’ll need
- 1 cup milk (or half milk/half cream if you’re feeling indulgent)
- 2 tsp cornflour (cornstarch)
- 1 tbsp Dijon mustard (or wholegrain mustard for texture)
- 1 tsp dried mixed herbs (thyme, oregano, or parsley all work)
- 1 tbsp butter
- Salt and pepper, to taste

How to make it
In a microwave safe jug, whisk the cornflour into the cold milk until smooth. Add the mustard, herbs, and butter, then stir everything together.
Microwave on high for 1 minute, stir, then heat for another 1–2 minutes until the sauce thickens into a silky, pourable consistency. Season with salt and pepper, taste, and adjust, add more mustard if you like it punchier.
